The petals of the Blue Pea Flower, (Latin: Clitoria ternatea), have been used immemorial to add colour to celebratory drinks in various locales around the world.
Start by soaking the flowers in 1 cup of freshly boiled water per serving. Let the flowers steep for 15 minutes, then strain. Notice the deep blue hue of the water. Next, add a few drops of lemon for sweetness and watch your glass turn purple.
Once water is added to the tea, the deep blue liquid changes color based on the pH level of whatever is added next. Served hot or cold, mix with honey, ginger, mint, or experiment with other tea and herbal blends.
