Tara gum is a natural additive manufactured by separating and grinding the endosperm of C. Spinosa seeds cultivated in the mountains of Peru. Tara Gum E417 is used as thickener and gelling agent in baked goods, dairy products, frozen desserts, water jellies, fruit preparations, meat-based products, sauces and dressings. A 1/2 tsp gives homemade ice cream a creamy smooth mouthfeel.
