The product we drink today from fell as rain far back in the Middle Ages, and was then naturally filtered over the last eleven hundred years, cleansing the water of all bacteria and Nitrates, which show up at less than .1 milligrams per liter. As with many of the great natural waters, the Saint Geron source was enjoyed by the Romans; in the 19th Century coins from the reign of Faustina Augustus were found in the source.
