Grass Jelly Topping

1 can Bossen grass jelly liquid concentrate

480 oz. water

190 g cornstarch

Honey, simple syrup, or condensed milk to taste (if desired)

In a large pot, mix the grass jelly concentrate with water. If desired, add honey, simple syrup, or condensed milk for delicious sweetness. Bring to a boil. In a separate bowl, mix the cornstarch with a small amount of water until the starch is dissolved. Mix the slurry into the grass jelly mixture and bring to a boil again, then remove from heat. If hot grass jelly is desired, allow the mixture to cool slightly before serving. If cold grass jelly is desired, allow the mixture to cool before refrigerating until a jello-like consistency is achieved. Keep unused jelly refrigerated; do not freeze.
